Coconut is the new Black

I got a lot of questions about the homemade coconut yogurt I made the other day so I figured I’d post the recipe! I'm honestly not sure if I even did it right, but let me tell you, I was goooooood! My boyfriend can attest to that too. We gobbled it right up!
After doing an Everly Well Food Sensitivity kit and a round of the Whole30 I found out that I am highly reactive (or sensitive) to cow’s milk and dairy products. It was a little heart breaking at first because I LOVE cheese. Everything cheese. Mac & cheese, pizza with extra cheese topped with parm, cheese dips, meat & cheese plates… the lot. But, since eliminating it, I feel so much better. My stomach pains and bloating (associated with food) have gone away, and I have been more focused and clear minded. I still miss pizza, but I’d be lying if I said I didn’t still indulge in a slice here and there… I just pay the price. Knowing what foods agree and disagree with your body is an extremely empowering feeling and if you struggle with food sensitivity, belly bloat, cloudy brain, fatigue, restlessness, insomnia etc. I would recommend doing an elimination diet such as the whole30. You may be surprised at how powerful the effects of food can be and how it may be wreaking havoc on your daily life.
Okay, back to the YOGURT!

Ingredients:
Organic Unsweetened Coconut milk
2 Tablespoons Pistachio pieces
1 Tablespoon Chia Seeds
2 Teaspoons Vanilla Extract
1 Tablespoon MCT oil (optional)
1-2 capsules Probiotic
Directions:
Blend organic unsweetened coconut milk in a bowl (you could probably use a food processor or blender too!) then add pistachio pieces, chia seeds and vanilla extract. Break open 2 probiotic pills and stirred them in! Cover it and put it in the fridge for 12-24 hours! (24-48 would probably be better to allow the live and active cultures to really activate! But I got impatient!)
*Top with fruit, nuts, seeds, & a fat ball, if desired : )
Verdict?? Amazing!
AND virtually sugar free! (and high in fat, of course)
Notes: Next round I’m going to try to make it with the water from the coconut milk strained to see if that makes a difference! I want it to be as thick as possible!
I have also gotten suggestions to add Agar Agar and/or Psyllium Husk as a thickening agent! I have not tried this yet, but when I do I will be sure to let you guys know how it turns out!
