Just a Sprinkle of PB

"You can always save the day with sprinkles" -unknown

I have received so many messages about my PB energy bites lately, so I decided it was about time I shared the recipe! I have made them a few times now but I feel as though I have finally perfected the recipe! I am going to share with you step by step instructions on how to make these beauties, and I am also going to include the name brands that I use! You do not need to use these same brands, but they are my personal favorites for this particular recipe! I hope you enjoy! :)

Peanut Butter Energy Bites

What you'll need:

1 Cup Oats (Bob's Red Mill)

2/3 Cup Unsweetened Coconut, preferably shredded (Bob's Red Mill)

1/2 Cup Smooth PB (Teddies Organic PB)

1/2 Cup Milled Flax Seeds (Woodstock Foods)

1/2 Cup Semi Sweet or Dark Chocolate Chips (Ghirardelli)

1/3 Cup Blue Agave (Wholesome)

1 Tablespoon Chia Seeds (Mamma Chia)

1 Tablespoon Vanilla Extract

(I added a tiny handful of white chocolate chips, just for fun!)

Combine all ingredients in a large mixing bowl until well incorporated. Add sprinkles until you smile : )

It helps to refrigerate the mixture for 20-30 minutes before balling it up, but if you are in a rush it is not necessary! Once you're ready, use both hands to mold your concoction into golf ball sized bites!

I then roll them in more sprinkles, but this step is at the chef's discretion ;)
