Cinnamon Banana Oatmeal Pancakes

The Inside Scoop:

2 Ripe Bananas

3 Eggs

1 Teaspoon Vanilla Extract

1 Teaspoon Ground Cinnamon

1 Cup Oats [Steel Cut or Quick Oats]

What to do:

Combine bananas, eggs, cinnamon and vanilla with a whisk or hand mixer until well blended. Fold in Oats until well incorporated. Heat greased skillet on medium until butter or ghee is melted. Using a 1/2 cup, scoop batter onto hot skillet. Cook pancakes for approximately 2 minutes on each side or until browned and cooked through.
